My son and I love making homemade cookies; this recipe for chocolate chip, craisin and oatmeal cookies is one of our favourites. The recipe I use is adapted from the Chip Chip Hooray recipe in the Company’s Coming Kids Do Baking cookbook. I have added a healthy twist by incorporating coconut oil, coconut palm sugar and craisins in the recipe.
Ingredients
1/2 cup margarine
1/2 cup coconut oil
1/2 cup brown sugar
1/2 cup coconut palm sugar
1 large egg
1 tsp pure vanilla extract
1/8 tsp salt
2 c whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1 cup craisins
1 cup quick oats
1 cup semi-sweet chocolate chips
1. Turn oven on to 350 F (175 C). Put the margarine, coconut oil, brown sugar and coconut palm sugar in a large bowl. Beat until light and fluffy. Add in the egg, vanilla and salt. Beat well.
2. Put the whole wheat flour, baking powder and baking soda into a small bowl. Stir. Add half of flour mixture to wet mixture. Mix well. Add remaining flour mixture. Mix until no dry flour remains.
3. Add in the craisins, oats and chocolate chips. Mix well. Grease cookie sheets with a light coat of margarine. Drop cookie mix 1 tbsp at a time about 2 inches apart onto cookie sheets. Bake in oven, 1 sheet at a time for about 10 minutes until bottoms are golden.
Makes about 50 delicious kid and husband approved chocolate chip, craisin and oatmeal cookies. Yum!
